National ProStart Student Invitational Results
The National Restaurant Association Educational Foundation (NRAEF) held the National ProStart Student Invitational (NPSI) at the beginning of May in Washington D.C. The winner’s of Florida’s Culinary Competition and Management Competition traveled to D.C. to represent our state. Martin County High School, lead by instructors Shaun Southwick and Ashley Sesta, represented Florida in the Culinary Competition and finished 13th. Wekiva High School, with instructor Chris Bates, represented Florida in the Management Competition and finished 19th. Teams are pictured at left.

Rachael Ray Grants Awarded
Universal Orlando Internship Program
Last year Universal Orlando launched a Food & Beverage Operations internship program. This program is designed to give students exposure to high level executives, frontline leaders and team members, and be able to impact and own projects that would otherwise take them years of field experience to achieve. Past interns have done everything from launching and implementing a campus wide mocktail program to helping improve and development new hire training programs.
Universal has expanded the internship program beyond Operations to also include Project Management and Culinary. Interns will have the opportunity to be inaugural program participants for Universal Food & Beverage Culinary. The program focuses on three key areas: culinary creativity, menu development, and restaurant operations.
Interested applicants must be college students, freshman are acceptable. For information on specific internship opportunities, click on the link below. ProStart & ServSafe News
- The 3rd edition of the ProStart curriculum, Foundations of Restaurant Management & Culinary Arts, is currently scheduled to be available for the 2025-2026 school year
- The 8th edition of the ServSafe Manager book is scheduled to be available after October 1, 2023 which will include the 2022 Food Code updates

- The NRAEF is looking to connect with educators who meet the criteria below. Please let us know if you are willing to work in a focus group about these issues:
- Work in schools focused on students with disabilities i.e. schools for the deaf

Hospitality Industry Internships
The Hospitality Industry Internship (HII) provides the opportunity for Florida ProStart & HTM instructors to work in a foodservice/lodging establishment for at least 40 hours. Once the required paperwork has been processed, the participant will receive a personal check for $600.
To qualify for an HII, the instructor must teach the ProStart, HTM, or HTMP curriculum during the 2022-2023 school year. If you are already employed at a restaurant or hotel, you MAY NOT use that site for your internship. The restaurant/hotel must be a new work experience for you, not somewhere you have worked before or used as an HII internship location.
The applicant must secure a position at a foodservice or lodging facility where a minimum of 40 hours of hands-on experience is guaranteed. The host location may pay the recipient but is not required to do so.
The FRLAEF will award 11 HII’s this school year on a first-come, first-served basis. So apply NOW! Work experience may begin once the applicant receives an award notification from the FRLAEF.
Complimentary ServSuccess Materials
ServSuccess was introduced last year by the National Restaurant Association. It is a stackable foodservice industry credential. The entry level certification is Certified Restaurant Professional (CRP). Individuals must have 400 hours of industry experience along with the ServSafe exam to be eligible to sit for the CRP. No training is required but five modules are offered.
